Creamy Tomato Pasta
A comforting, incredibly rich pasta dish that comes together in under 30 minutes. The secret lies in slowly roasting the cherry tomatoes until they burst, creating a natural, vibrant sauce.

Boil the pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
Cook the tomatoes
While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the halved cherry tomatoes and cook until they begin to burst and release their juices, about 8-10 minutes. Stir occasionally.
Add aromatics & cream
Add the minced garlic and cook for 1 minute until fragrant. Reduce the heat to low and stir in the heavy cream. Season with salt and pepper to taste. Let the sauce simmer gently for 2 minutes to thicken slightly.
Combine and serve
Add the drained pasta to the skillet and toss to coat with the creamy tomato sauce. If the sauce is too thick, add a splash of the reserved pasta water. Remove from heat, stir in fresh basil and a generous amount of grated Parmesan. Serve immediately.
